The idea of creating this graphic memoir of the salting of fish on Spains Mediterranean coast came from the attempt to archive some of our culinary customs and traditional cooking methods that had been passed down from generation to generation over the centuries. This documentary covers an important part of dry-salted sea products that have become a fundamental element of our particular version of the Mediterranean diet. It also offers a historic journey through salting, its gastronomic tradition and recipes from different eras. In addition, it covers the influence of this artisan world on popular language and lore.
