Most of the industrial alco hol produced in the United States for many years has been from this source. Molasses has an advantage over starchy materials such as potatoes and corn, in that most of its carbohydrate (sugar) is already in suitable form for transformation into alcohol by the action of yeast, whereas the starch bearing raw materials must first be treated with enzyme, such as diastase, (or with dilute acids) to convert the starch into sugar before fermentation can take place. In general, byproduct or waste molasses consists of the residues from evaporated sugarcane juice, after the extraction of the crys tallizable sugar.
